Eat

Spicy Tuna Cakes


When I said cheap, I meant cheap.  Pull out those cans of tuna and get on this!!
This recipe was inspired by a recipe provided by Tuna the Wonderfish!

Ingredients
2 Cans of Tuna
Red Bell Pepper
Red Onion
Breadcrumbs
Season Salt
Salt
Pepper
Sriracha Hot Sauce
EVOO
Rice

Take the 2 cans of tuna and drain them.  Dump the tuna into a bowl (or old Tupperware container).  Cut some red bell pepper and red onion into small pieces.  Put the veggies into the same bowl as the tuna.  Season generously with season salt and a bit of salt and pepper.  Stir some breadcrumbs into the mix until the tuna looks as if it can hold itself together (think of making meatballs and look for a similar texture).  Stir in some Sriracha (or any other hot sauce you have lying around) if you like a little kick.  Put a pan on the stove with some EVOO.  Make small crab cake sized patties out of the tuna mix and put them in the oiled pan (should be able to make about 4).  Cook the tuna cakes until the side down is brown and then flip to cook the other side.  Cooking time is about 5-7 minutes total.  While the cakes are cooking throw some rice with water in the microwave (or cook it on the stove if you're feeling fancy.. but it's just going to taste the same anyway).  Put some cooked rice down on a plate with your tuna cakes on top.  Add some salt, pepper, and butter to the rice for flavor and a dab of wasabi for an extra kick!
Might be tasty on a slider bun as well!  Have fun with it!
